Cornflake Crack Brittle
CORNFLAKE CRACK
Ingredients
5 cups cornflakes
1 cup salted butter, diced
1 cup soft brown sugar, firmly packed
1/2 t salt
16 ounces milk chocolate
1/2 c chopped nuts (walnuts or pecans)
1 tsp flaky sea salt (optional)
Directions

Preheat oven to 350°F.

Line a 9X13 pan with parchment paper, grease with butter, and set aside.

Add the cornflakes to a large heat-proof bowl and set aside.

Add the butter, sugar and salt to a medium pot and place over medium heat.

Cook for 1-2 minutes, stirring, until the butter is melted.

Bring to a simmer and simmer for 1 minute on medium heat.

Turn off heat and stir for another minute.

Remove from heat and pour the mixture immediately over the cornflakes.

Toss together until well coated.

Tip the mixture out onto the prepared pan and spread into an even layer.

Bake on the upper-middle oven rack for 10-12 minutes, until it is very golden brown and caramelized (keep an eye on it as it can burn easily).

Set aside to cool completely, before breaking up into pieces.

Place milk chocolate in microwave safe bowl.

Heat at 50% power for 30 seconds.

Remove bowl and stir.

Heat at 50% power for 30-second intervals, stirring between each.

When 80 to 85% of them are melted and only a few lumps remain, remove the bowl.

Scrape the sides of the bowl with the spatula and stir the chocolate chips until smooth.

Pour the melted the chocolate over the cornflakes.

Sprinkle with nuts of your choice OR sea salt.

Place in refrigerator overnight to set.
